Quinta do Carmo
In Quinta do Carmo is located the winemaking center of all Alentejo wines, Bacalhôa Vinhos de Portugal, SA. With modern technology, it has a capacity of 3 million litters and an operating system that maximizes smoothness in transport of grapes, wine masses, and wines, ensuring stability throughout the winemaking process.
Our Alentejo wines are entirely produced from our own grapes, the control of the production process is complete from grape to bottle. There are about 350ha spread over several properties located in Estremoz, Arronches (Portalegre), Borba and Arraiolos.
Its castes are very rich: the varieties traditionally planted in the Alentejo, such as Aragonez, Trincadeira, Alfrocheiro, Alicante Bouschet, or more recently introduced varieties such as Touriga Nacional, Syrah and Cabernet Sauvignon.
In these different terroirs, capable of producing the best quality grapes, each variety acquires its own personality in each vineyard.
Small capacity fermentation vats (ie 10 tonnes of grapes) allow separate vinification of various varieties by vineyard plot. There is also a unit for special winemaking adapted to manual harvesting where fermentation takes place in robotic wine presses.
